Ingredients
- Snowflake Tortilla Chips: 4 large flour tortillas, 2 tbsp olive oil, 1/2 tsp sea salt
- Salsa: 3 medium ripe tomatoes diced, 1/2 small red onion finely chopped, 1 small jalapeño seeded and minced, 1/4 cup fresh cilantro chopped, Juice of 1 lime, 1/2 tsp salt, 1/4 tsp black pepper
- Winter Salad: 4 cups mixed winter greens (e.g., kale, baby spinach, arugula), 1/2 cup thinly sliced radishes, 1/2 cup pomegranate seeds, 1/3 cup crumbled feta cheese, 1/4 cup toasted pecans or walnuts roughly chopped
- Dressing: 2 tbsp olive oil, 2 tsp white wine vinegar, 1 tsp honey, Salt and pepper to taste
Instructions
- Step 1:
- Preheat the oven to 375°F (190°C).
- Step 2:
- Using snowflake-shaped cookie cutters cut out shapes from the flour tortillas Brush both sides with olive oil and sprinkle with sea salt.
- Step 3:
- Arrange the tortilla snowflakes on a baking sheet in a single layer Bake for 810 minutes flipping halfway until golden and crisp Let cool.
- Step 4:
- In a medium bowl combine diced tomatoes red onion jalapeño cilantro lime juice salt and black pepper Stir well and set aside for flavors to meld.
- Step 5:
- In a large bowl gently toss winter greens sliced radishes pomegranate seeds feta cheese and toasted nuts.
- Step 6:
- Whisk together olive oil white wine vinegar honey salt and pepper Drizzle over salad and toss to coat.
- Step 7:
- Divide salad among plates Arrange snowflake tortilla chips on top or on the side Serve with a generous spoonful of salsa.
