01 - 4 slices sourdough bread
02 - 4 slices sharp cheddar cheese
03 - 2 tablespoons unsalted butter, softened
→ Meats
04 - 4 ounces sliced cooked turkey breast

05 - 1/2 cup kimchi, drained and roughly chopped
06 - 1 tablespoon mayonnaise (optional)
07 - 1 teaspoon Dijon mustard (optional)
# Directions:
01 - Arrange the bread slices on a clean surface. Optionally, spread mayonnaise and Dijon mustard on one side of each slice.
02 - On two slices of bread, layer cheddar cheese, sliced turkey, evenly spread chopped kimchi, and another slice of cheddar. Top with the remaining bread slices.
03 - Generously spread softened butter on the outer sides of each sandwich.
04 - Preheat a large nonstick skillet or griddle over medium heat.
05 - Place sandwiches onto the skillet and cook for 3 to 4 minutes per side, pressing gently, until the bread turns golden brown and the cheese melts.
06 - Remove sandwiches from heat, let rest for 1 minute, then slice and serve warm.
