Ingredients
- Eggs: 6 large eggs
- Filling: 3 tablespoons mayonnaise 1 teaspoon Dijon mustard 1 teaspoon white wine vinegar or lemon juice 1/8 teaspoon salt 1/8 teaspoon black pepper
- Decorations: 2 tablespoons finely diced red bell pepper 2 tablespoons finely diced green bell pepper 1 tablespoon finely chopped chives or green onions 1 tablespoon finely grated carrot 2 tablespoons finely diced pickles or cornichons (optional) 6 thin chive stems or parsley stems (for ornament hangers)
Instructions
- Step 1:
- Place eggs in a saucepan cover with water and bring to a boil. Once boiling remove from heat cover and let stand for 10 minutes.
- Step 2:
- Drain and cool eggs under cold water. Peel carefully.
- Step 3:
- Slice eggs in half lengthwise. Gently remove yolks and place them in a medium bowl.
- Step 4:
- Mash yolks with mayonnaise Dijon mustard vinegar (or lemon juice) salt and pepper until smooth.
- Step 5:
- Spoon or pipe the filling back into the egg whites creating a rounded ornament shape.
- Step 6:
- Decorate tops with diced peppers carrots pickles and chives to mimic festive ornaments.
- Step 7:
- Insert a chive or parsley stem at the top of each egg as the ornament hanger.
- Step 8:
- Chill until ready to serve.
