08 - 1/3 cup unsweetened shredded coconut for rolling
# Directions:
01 - In a medium mixing bowl, combine shredded coconut, coconut butter, coconut oil, powdered erythritol, matcha powder, vanilla extract, and sea salt. Mix thoroughly until a dough forms.
02 - Refrigerate the mixture for 10 to 15 minutes to slightly firm up.
03 - Using a tablespoon or small cookie scoop, portion the dough and roll into 1-inch balls.
04 - Roll each ball in the additional shredded coconut to coat evenly.
05 - Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes until firm.
06 - Store in an airtight container in the refrigerator for up to one week.
