# Directions:
01 - Preheat oven to 300°F. Line a baking sheet with parchment paper.
02 - In a large, clean bowl using an electric or stand mixer, beat egg whites and cream of tartar until soft peaks form. Gradually add granulated sugar, continuing to beat until stiff, glossy peaks appear.
03 - In a separate bowl, whisk egg yolks, cornstarch, and vanilla extract until mixture is smooth and homogeneous.
04 - Fold the egg yolk mixture gently into the whipped egg whites, preserving airiness and volume.
05 - Separate batter into multiple bowls according to desired colors. Add several drops of gel food coloring to each, and fold delicately to distribute evenly without deflating.
06 - Spoon each colored batter in adjacent dollops on prepared baking sheet to form a rainbow pattern. Swirl with a spatula for marbling if preferred.
07 - Bake for 25 minutes, or until set and lightly golden.
