01 - 1 large head cauliflower, separated into bite-sized florets
02 - 3/4 cup all-purpose flour
03 - 1 tbsp cornstarch

08 - 3/4 cup unsweetened plant milk (almond, soy, or oat)
09 - 1 cup panko breadcrumbs

10 - 3/4 cup vegan BBQ sauce (store-bought or homemade)
11 - 1 tbsp maple syrup (optional)

12 - 1/2 cup vegan mayonnaise
13 - 1/4 cup unsweetened plant milk
14 - 1 tbsp fresh lemon juice
15 - 1 tsp apple cider vinegar
16 - 1/2 tsp garlic powder
17 - 1/2 tsp onion powder
18 - 1 tbsp chopped fresh dill (or 1 tsp dried)
19 - 1 tbsp chopped fresh chives (or 1 tsp dried)
20 - Salt and freshly ground black pepper, to taste
# Directions:
01 - Preheat oven to 425°F. Line a large baking sheet with parchment paper and set aside.
02 - In a large bowl whisk together the all-purpose flour, cornstarch, garlic powder, smoked paprika, salt, and black pepper. Gradually stir in the plant milk until a smooth, thick batter forms.
03 - Working one at a time, dip each cauliflower floret into the batter, allowing excess to drip off, then press into the panko breadcrumbs until fully coated. Arrange the coated florets in a single layer on the prepared baking sheet.
04 - Bake the coated florets for 20 minutes, turning once midway to promote even browning and crisping.
05 - While the florets bake, combine the vegan BBQ sauce and maple syrup in a small bowl and stir until smooth.
06 - Remove the baking sheet from the oven. Using tongs, transfer each floret to the bowl with BBQ sauce and toss to coat evenly, then return the sauced florets to the baking sheet in a single layer.
07 - Return the sauced florets to the oven and bake an additional 12 to 15 minutes, until the coating is crispy and the sauce is caramelized.
08 - While the florets finish baking, whisk together the vegan mayonnaise, plant milk, lemon juice, apple cider vinegar, garlic powder, onion powder, dill, chives, salt, and pepper in a bowl until smooth and well combined. Adjust seasoning to taste.
09 - Plate the hot BBQ cauliflower wings and serve immediately with the vegan ranch on the side and optional celery and carrot sticks.
