16 - Additional rainbow sprinkles, as needed
17 - Edible spring candies (optional)

# Directions:

01 - Preheat the oven to 350°F. Grease two 8-inch round pans, line the bottoms with parchment, and lightly grease the parchment.
02 - Whisk together the flour, baking powder, and salt in a medium bowl until evenly distributed.
03 - In a large bowl, beat the butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3–4 minutes. Add the eggs one at a time, mixing briefly after each addition, then beat in the vanilla.
04 - Alternately add the flour mixture and the milk to the butter mixture in three additions, beginning and ending with the flour and mixing gently after each addition just until combined. Fold in the sprinkles with a spatula to avoid bleeding.
05 - Divide batter evenly between the prepared pans and smooth the tops. Bake 28–32 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pans 10 minutes, then invert onto a wire rack to cool completely.
06 - Beat the cream cheese and butter together until smooth. Gradually add powdered sugar and beat until incorporated. Stir in vanilla, then add 2 tablespoons milk and beat to a spreadable consistency, adding the third tablespoon if needed. Fold in the sprinkles and refrigerate until assembly.
07 - Place one cake layer on a serving plate. Spread a thick, even layer of the funfetti filling over the first layer. Top with the second layer, then frost the top and sides with the remaining filling using an offset spatula for a smooth finish.
08 - Press additional sprinkles onto the frosting and arrange edible candies if using. Chill at least 30 minutes to set the filling and make slicing cleaner before serving.

# Expert Advice:

01 -
  • You can never have too many sprinkles, and this cake takes the fun to another level with a creamy dip and cake all in one.
  • It assembles quickly and doubles as a dessert and a conversation piece at any party.
02 -
  • Once, I rushed to frost before the cake had cooled and learned the hard way: patience or the dip will melt right off.
  • Swapping in nonpareil sprinkles might look tempting, but they bleed colors into the batter and ruin those cheerful confetti pops.
03 -
  • Measure your flour by spoon-and-level so the cake stays soft, never dense.
  • Let the frosted cake chill — setting it means neater, cleaner slices every time.
