A creamy and fragrant latte featuring homemade pistachio milk, perfect for a nutty twist on your favorite coffeehouse treat.

I first experimented with pistachio milk when searching for dairy-free alternatives with a touch of luxury. The velvet texture and delicate flavor made this latte instantly popular in my house.

Ingredients

  • Pistachio Milk: 1 cup raw unsalted pistachios, 3 cups filtered water, 1 or 2 tbsp maple syrup or honey (optional), 1/2 tsp pure vanilla extract, pinch of sea salt

Instructions

Soak pistachios:
Place pistachios in a bowl, cover with water, and soak overnight or for at least 6 hours. Drain and rinse well.
Blend milk:
Combine soaked pistachios with 3 cups filtered water, vanilla extract, maple syrup or honey, and a pinch of sea salt. Blend until very smooth.
Strain:
Pour the blended mixture through a nut milk bag or fine mesh sieve into a pitcher. Discard solids or reserve for baking.
Heat milk:
Warm pistachio milk gently in a saucepan, whisking until hot but not boiling. Sweeten to taste if desired.
Brew coffee:
Prepare espresso or strong brewed coffee as preferred.
Assemble latte:
