One-Pot Mexican Rice Beans (Print Version)

# Directions:

01 - Heat a large deep skillet or Dutch oven over medium heat. Add a splash of oil and sauté the chopped onion for 2 to 3 minutes until softened.
02 - Stir in minced garlic and diced red bell pepper. Cook for an additional 2 minutes until fragrant.
03 - Incorporate the rinsed rice, stirring to coat with vegetables and oil. Toast for 1 to 2 minutes.
04 - Add diced tomatoes with their juice, broth, corn, black beans, cumin, smoked paprika, chili powder, oregano, salt, and black pepper. Stir thoroughly to combine all ingredients.
05 - Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for 20 to 22 minutes, until rice is tender and liquid is mostly absorbed.
06 - Remove from heat and let it rest, covered, for 5 minutes.
07 - Fluff the rice with a fork, taste, and adjust seasoning if needed.
