01 - Preheat the oven to 400°F. Combine cranberries, olive oil, honey, and salt on a baking sheet, then roast for 15 minutes until cranberries are softened and slightly caramelized. Set aside.
02 - Heat olive oil in a large pot over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned, about 5–7 minutes. Drain excess fat if needed.
03 - Add diced onion to the pot and cook for around 5 minutes until softened. Stir in minced garlic, tomato paste, oregano, basil, and red pepper flakes; cook for 2 minutes until fragrant.
04 - Pour in crushed tomatoes and broth. Stir to combine, bring to a boil, then reduce heat and maintain a gentle simmer.
05 - Add broken lasagne noodles to the pot. Simmer uncovered, stirring occasionally, for 12–15 minutes until noodles are al dente.
06 - Adjust seasoning with salt and pepper as needed. Ladle soup into warm bowls.
07 - Top each bowl with a dollop of ricotta, a sprinkle of mozzarella and Parmesan, spoonful of roasted cranberries, and fresh basil.
