Feta Fried Eggs Grilled Cheese (Print Version)

Crispy feta fried eggs meet melted cheese on golden grilled sourdough for a flavorful meal.

# Components:

→ Dairy & Cheese

01 - 4 oz crumbled feta cheese
02 - 4 slices cheddar or mozzarella cheese
03 - 2 tbsp unsalted butter, at room temperature

→ Bread

04 - 4 slices sourdough or country-style bread

→ Eggs

05 - 2 large eggs

→ Pantry

06 - 1 tbsp olive oil
07 - Freshly ground black pepper, to taste
08 - Pinch of red pepper flakes (optional)

# Directions:

01 - Heat a nonstick skillet over medium heat and add olive oil. Sprinkle half the crumbled feta into two circles roughly the size of the bread slices directly onto the skillet. Crack one egg into the center of each feta circle. Season with black pepper and optional red pepper flakes. Cook for 2 to 3 minutes, until feta edges are golden and egg whites are set. Flip carefully and cook 1 additional minute for soft yolks or longer for firmer yolks. Remove and set aside.
02 - Butter one side of each bread slice. Place two slices buttered side down on a clean surface. Layer each with two slices of cheddar or mozzarella cheese. Top each with a feta-fried egg. Cover with the remaining bread slices, buttered side up.
03 - Clean the skillet and return it to medium heat. Grill the sandwiches for 2 to 3 minutes per side, pressing gently, until the bread is golden brown and the cheese has melted.
04 - Slice the sandwiches and serve immediately.

# Expert Advice:

01 -
  • The feta crisps up at the edges while the egg cooks, creating layers of texture that a regular fried egg sandwich can't touch.
  • It's satisfying enough to be dinner but comes together in the time it takes to make coffee.
  • That moment when you bite through the golden crust of the grilled cheese and hit the soft yolk—pure comfort.
02 -
  • The pan temperature matters more than you think—too hot and the feta burns before the egg cooks, too cool and nothing browns. Medium heat is genuinely the sweet spot.
  • Don't skip the flip. A lot of people shy away from flipping a fried egg, but a quick, confident motion keeps the yolk intact and cooks the bottom evenly.
  • Pressing the sandwich while it grills matters. It melts the cheese faster and helps the bread make proper contact with the pan for that golden crust.
03 -
  • If you love extra flavor, sauté some spinach in olive oil while your feta-egg cooks, then tuck it between the bread and cheese before grilling.
  • A side of sliced tomato or a small salad cuts through the richness and makes the meal feel complete without adding much time.
